Hrudka is a creamy custard cheese staple for Eastern-European Easter meals. Enjoy it sliced on its own or in a sandwich with ham or kolbassi on paska bread with beet horseradish. A simple and nutritious recipe.
Ingredients:
  • 12 eggs
  • 1 quart whole milk
  • 1 cup white sugar
  • 1 teaspoon ground cinnamon, or to taste
Instructions:
  • In a large saucepan, vigorously whisk together eggs, milk, sugar, salt, and cinnamon. Cook over low to medium-low heat, stirring constantly for 20 to 30 minutes until curds form and whey separates. Avoid high heat and remember to keep stirring to avoid sweet scrambled eggs.
  • Drain the mixture into a cheesecloth-lined colander, shape into a ball, twist to remove excess moisture, secure with a twist tie, and let hang for 8 hours to overnight.
