Savory Mexican casserole with beef, beans, tomatoes, and cheesy layers on a crunchy tortilla chip crust.
Ingredients:
  • nonstick cooking spray
  • 0.25 cup diced yellow onion
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (8 ounce) can black beans, rinsed and drained
  • 1 cup picante sauce
  • 1 (1 ounce) packet taco seasoning
  • 4 (7 inch) flour tortillas
  • 1.5 cups shredded Monterey Jack cheese, divided
  • 1.5 cups shredded pepper Jack cheese, divided
  • 3 cups crushed tortilla chips, divided
  • aluminum foil
  • 0.5 cup chopped green onion
  • 0.5 cup chopped fresh cilantro
  • 0.25 cup sour cream, or to taste
Instructions:
  • 1. Preheat a large nonstick skillet over medium-high heat. Cook ground beef and onion until browned and crumbly, about 5 to 7 minutes. 2. Reduce heat to low and add diced tomatoes, black beans, picante sauce, and taco seasoning. Simmer until most of the liquid evaporates, around 20 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C and coat a 9x13-inch baking dish with cooking spray.
  • Layer flour tortillas in the baking dish, creating a base and sides. Top with the beef mixture, then sprinkle 3/4 cup Monterey Jack cheese, 3/4 cup pepper Jack cheese, and 1 1/2 cups crushed tortilla chips. Cover everything with foil.
  • 1. Bake in the preheated oven for 25 minutes. Then, uncover it, sprinkle the remaining Monterey Jack cheese, pepper Jack cheese, and crushed tortilla chips on top. Return to the oven and bake until the cheese is melted and bubbly for an additional 8 to 10 minutes. Finish it off with a sprinkle of green onion and cilantro, and serve with a dollop of sour cream.
