Moist apple muffins with crunchy walnuts.
Ingredients:
  • 1 cup white sugar
  • 0.75 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon salt
  • 3 McIntosh apples, peeled and coarsely chopped, or more to taste
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and prepare a 12-cup muffin tin by greasing or lining it with paper liners.
  • In a mixing bowl, use an electric mixer to blend sugar and oil until smooth for about 2 minutes. Then add eggs and vanilla extract to the sugar mixture and blend until smooth for about 1 minute.
  • In a separate bowl, combine flour, cinnamon, baking soda, and salt. Mix them into the sugar mixture until just combined. Gently fold in apples and walnuts, then spoon the batter into muffin cups.
  • Bake until a toothpick inserted in the center comes out clean, about 20-25 minutes in the preheated oven.
