Satisfying venison and potato casserole with veggies and creamy cottage cheese - a comforting one-dish meal.
Ingredients:
  • 2 cups buttery mashed potatoes
  • 1 pound lean ground venison (or other big game)
  • 1 tablespoon canola oil
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 0.5 cup diced red bell pepper
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 eggs, beaten
  • 1 cup cottage cheese
  • 2 tomatoes, sliced
  • 1 cup shredded Colby Jack or Cheddar cheese
Instructions:
  • Preheat oven to 350°F (175°C) for a perfect bake.
  • Evenly distribute the mashed potatoes in a 2-quart casserole dish and set it aside. Brown the venison in a large skillet over medium-high heat until crumbly and no longer pink, then set aside.
  • In a skillet, heat the aromatic canola oil until shimmering. Add red onion, garlic, celery, and red bell pepper, sauté until onion softens, about 3 minutes. Mix in cooked venison, season with Worcestershire, salt, and pepper. Transfer mixture over potatoes in the casserole dish.
  • Combine eggs and cottage cheese in a small bowl, then spread this mixture evenly over the meat. Place tomato slices on top and sprinkle with cheese.
  • Bake in a hot oven until firm, for around 20 minutes.
