Classic gumbo packed with shrimp, sausage, bacon, okra, and the holy trinity in a rich, caramelized roux. Serve over steaming rice for a comforting meal.
Ingredients:
  • 1 pound smoked sausage links, cut into 1/4-inch slices
  • 0.25 pound bacon, chopped
  • 2 cups chopped okra
  • 1 (14.5 ounce) can diced tomatoes with green chile peppers
  • 0.5 cup unsalted butter
  • 0.66666668653488 cup all-purpose flour
  • 2 cups chopped onion
  • 0.5 cup chopped green onions
  • 0.66666668653488 cup finely chopped green bell pepper
  • 0.66666668653488 cup finely chopped celery
  • 2 tablespoons minced garlic
  • 2 cups water
  • salt to taste
  • ground black pepper to taste
  • 0.25 teaspoon cayenne pepper
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 6 cups water
  • 2 pounds uncooked medium shrimp, peeled and deveined
Instructions:
  • Cook the sausage in a skillet over medium heat until browned. Drain on paper towels and set aside. Cook the bacon in the same skillet until crisp, then set it aside. Add the okra to the hot bacon drippings and cook until tender. Drain the okra in a colander, discarding the bacon drippings.
  • Combine the okra and diced tomatoes in a saucepan over medium heat until simmering. Lower the heat to medium-low and cook the okra mixture for approximately 10 minutes.
  • In a large soup pot over medium heat, melt the butter and sauté the onion, green onions, green pepper, celery, parsley, and garlic until the onion starts to brown, around 10 minutes. Set aside the veggies while keeping the flavorful butter in the pot. Add the flour, stir well, and cook over low heat, stirring continuously, until the roux darkens to a milky chocolate shade, for 30 to 45 minutes. Be vigilant to prevent burning.
  • Once the roux has reached the perfect color, add 2 cups of water and whisk vigorously. Increase the heat to medium and incorporate salt, pepper, cayenne pepper, thyme, and bay leaves. Bring the mixture to a boil, then add the sausage, bacon, okra-tomato mixture, and 6 additional cups of water. Lower the heat to medium-low and simmer the gumbo, stirring occasionally, until it thickens and the flavors meld, approximately 45 minutes. Gently introduce the shrimp into the pot and let them cook until they become pink and opaque, which should take 6 to 8 minutes. Lastly, remove the bay leaves, taste, and adjust the seasoning before serving.
