Indulgent frozen chocolate mint pie with melted marshmallows, whipped cream, creme de menthe, and creme de cacao in a chocolate cookie crust.
Ingredients:
  • 16 chocolate wafer cookies, crushed
  • 4 tablespoons butter, melted
  • 0.75 cup milk, warmed
  • 24 large marshmallows
  • 0.25 cup creme de menthe liqueur
  • 2 tablespoons white creme de cacao
  • 1 cup whipping cream, whipped
  • 1 cup whipped cream for garnish
Instructions:
  • Combine chocolate cookie crumbs with melted butter, press mixture into a 9- or 10-inch pie dish, and chill for at least one hour.
  • Melt marshmallows in milk in a saucepan over medium heat. Allow to cool to room temperature. Stir in creme de menthe and creme de cacao until well combined. Gently fold in whipped cream. Pour the filling into the chilled pie shell and freeze until firm, about 4 hours.
  • Cut the pie and top with extra whipped cream, if desired.
