Ice-cube tray sausage rolls

Create quick and delicious cheat's sausage rolls effortlessly.
Ingredients:
  • 2 sheets frozen puff pastry, just thawed
  • 4 good-quality pork sausages (see note)
  • 1 egg, lightly whisked
  • Tomato sauce, to serve
Instructions:
  • Coat a plastic 12-hole, 40ml (2 tablespoon) ice-cube tray with a fine mist of olive oil. Lay 1 pastry sheet over the tray and press it gently into the indentations. Remove sausage filling from casings, evenly distributing it into the pastry-lined compartments.
  • Brush the pastry edges and center with egg. Layer the remaining pastry on top, press gently with your fingers, then use a rolling pin to seal the edges. Trim excess pastry with a knife. Freeze for 1 hour until firm.
  • Preheat the oven to 200C/180C fan forced. Grease and line a baking tray. Invert the ice-cube tray onto a chopping board and gently release the pastry. Slice into 12 pieces using a pizza cutter or sharp knife to form sausage rolls.
  • Arrange the sausage rolls on the lined baking tray and generously brush with the remaining egg. Bake until beautifully golden and fully cooked, about 20 minutes. Enjoy with a side of tomato sauce.
