Delicious Indian-inspired tray bake with cauliflower, chickpeas, and veggies - a hearty, healthy main or side dish.
Ingredients:
  • 130g packet sweet berry tomatoes
  • 1 small cauliflower, cut into large florets, small leaves reserved
  • 87.50 gm korma curry paste
  • 400g can chickpeas, drained, rinsed
  • 1 small red onion, cut into thin wedges
  • 1 lemon, cut into wedges
  • 125.00 ml plain Greek-style yoghurt
  • Fresh coriander leaves, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and generously grease a large baking tray with sides.
  • Start by gently detaching the tomatoes from the vine. Cut the cauliflower florets into thick slices. In a large bowl, mix the korma curry paste with cauliflower, chickpeas, and onion. Make sure everything is evenly coated. Transfer the mixture onto a baking tray. Season with salt and pepper, then add lemon wedges, tomatoes, and the cauliflower leaves that were set aside. Roast in the oven for 40 minutes until the cauliflower is tender and slightly charred.
  • Drizzle vegetables with creamy yogurt, then sprinkle with a pinch of salt and pepper. Finish with a generous handful of fresh coriander leaves. Plate and enjoy!
