Vibrant kale and moong dal curry bursting with Indian flavors - effortlessly delicious!
Ingredients:
  • 0.5 cup dried moong dal
  • 1 tablespoon olive oil
  • 0.5 tablespoon ground turmeric
  • 0.25 tablespoon cumin seeds
  • 3 cups chopped kale
  • 1 pinch chili powder
Instructions:
  • Let moong dal luxuriate in a water bath for 30 minutes, then gracefully bid adieu to the water.
  • In a large pan over medium-low heat, heat oil. Add turmeric and cumin seeds; cook until seeds start crackling. Stir in kale and soaked dal, then add chili powder and salt. Pour in 1/4 cup water and bring to a boil. Reduce heat to medium-low, cover, and cook until tender, stirring every 5 minutes, for 10 to 20 minutes.
