Indian lamb curry

Flavorful and easy curry dish.
Ingredients:
  • 36.80 gm vegetable oil
  • 4 lamb forequarter chops
  • 1 medium brown onion, cut into thin wedges
  • 115.50 gm rogan josh curry paste
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • 1 bunch English spinach, washed, trimmed, roughly chopped
Instructions:
  • In a large, heavy-based saucepan, heat half of the oil over high heat. Sear lamb for 1 to 2 minutes on each side until golden brown. Remove from the pan and set aside on a plate.
  • Heat the rest of the oil in a pan over medium heat. Add the onion and cook for 4 to 5 minutes until golden. Stir in the curry paste and cook for 30 seconds until fragrant. Add the tomato, then return the lamb to the pan. Cover and bring to a boil, then reduce heat and simmer for 30 minutes until the lamb is tender. Finally, add the spinach and cook for 1 to 2 minutes until wilted.
