Elevate your pumpkin soup with curried beans for a bold and flavorful twist.
Ingredients:
  • 18.20 gm olive oil
  • 1 onion, chopped
  • 750g pumpkin, peeled, chopped
  • 1020.00 gm chicken style liquid stock
  • 2 x 420g cans Heinz® Beanz Creationz™ Mild Curry Beanz
  • 165ml can coconut milk
  • Naan, to serve
  • Coriander sprigs, to serve
Instructions:
  • In a large saucepan over medium heat, sauté the onion for 5 minutes until softened. Mix in the pumpkin, then pour in the stock and Beanz Creationz™. Increase the heat and bring to a boil. Lower the heat, cover, and simmer for 10 minutes until the pumpkin is tender.
  • Smoothly blend the soup using a hand blender. Incorporate coconut milk and stir well. Heat gently until warmed through.
  • Garnish with fresh coriander and serve with warm naan bread.
