Try these flavorful Indian-spiced tofu burgers for a delicious vegetarian barbecue option.
Ingredients:
  • 100g green beans, trimmed, thinly sliced
  • 300g firm silken tofu
  • 1/2 red capsicum, finely chopped
  • 2 green onions, thinly sliced
  • 56.00 gm tikka masala curry paste
  • 62.50 ml plain flour
  • Canola oil cooking spray
  • 400g loaf Turkish pide
  • 112.50 gm Greek Style No Added Sugar Yoghurt
  • 40.00 ml finely chopped fresh coriander leaves
  • 40g baby spinach
  • 82.50 gm mango chutney, to serve
Instructions:
  • Briefly blanch beans in boiling water for 1 minute. Drain and immediately cool in cold water. Drain well.
  • Grate tofu and squeeze out excess water. Combine in a bowl with capsicum, onion, curry paste, flour, and beans. Season with salt and pepper, then mix thoroughly. Shape mixture into 4 patties, pressing firmly. Spray patties with oil on both sides before cooking.
  • Cut the Turkish pide into 4 equal pieces, then split each piece in half. Spray the cut sides with oil. Heat a barbecue hotplate or grill over medium-high heat. Cook the patties for 3 to 4 minutes on each side, or until heated through. Cook the bread for 1 to 2 minutes on each side, or until lightly charred.
  • In a small bowl, mix together yoghurt and fresh coriander. Season with salt and pepper. Place toasted bread bases on plates. Spread half of the yoghurt mixture on the bread. Add spinach and patties on top. Finish with a dollop of the remaining yoghurt mixture. Top with the remaining bread. Serve with mango chutney.
