Spicy Indian-inspired Chettinad chicken with fragrant spices, perfect for a quick and flavorful weeknight dinner.
Ingredients:
1poundchicken thighs, or more to taste
0.5 teaspoonground turmeric
0.5 teaspoonground cumin
0.5 teaspoonchile powder
salt to taste
3tablespoons vegetable oil
0.5onion, chopped
2dried red chile peppers, or more to taste
1teaspoonhulled, split pigeon peas (toor dal)
0.5 teaspoonwhole fenugreek seeds
0.5 cupwater
Instructions:
In a large bowl, toss together chicken thighs, turmeric, cumin, chile powder, and salt until fully coated. Cover with plastic wrap and refrigerate for about 15 minutes to let the flavors meld.
In a large skillet over medium heat, sizzle oil. Toss in onion, chile peppers, split pigeon peas, and fenugreek seeds; stir and cook for 3 minutes until aromatic. Introduce chicken; sear until golden for 5 minutes each side. Lower heat, pour in water, deglaze the skillet, and let simmer for 7 minutes to meld flavors.
