Spicy Indian-inspired Chettinad chicken with fragrant spices, perfect for a quick and flavorful weeknight dinner.
Ingredients:
  • 1 pound chicken thighs, or more to taste
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chile powder
  • salt to taste
  • 3 tablespoons vegetable oil
  • 0.5 onion, chopped
  • 2 dried red chile peppers, or more to taste
  • 1 teaspoon hulled, split pigeon peas (toor dal)
  • 0.5 teaspoon whole fenugreek seeds
  • 0.5 cup water
Instructions:
  • In a large bowl, toss together chicken thighs, turmeric, cumin, chile powder, and salt until fully coated. Cover with plastic wrap and refrigerate for about 15 minutes to let the flavors meld.
  • In a large skillet over medium heat, sizzle oil. Toss in onion, chile peppers, split pigeon peas, and fenugreek seeds; stir and cook for 3 minutes until aromatic. Introduce chicken; sear until golden for 5 minutes each side. Lower heat, pour in water, deglaze the skillet, and let simmer for 7 minutes to meld flavors.
