Festive mini pumpkin pies with vanilla wafer crust, baked in individual cups for a delightful holiday treat.
Ingredients:
  • 0.5 cup sugar
  • 2 teaspoons Spice Islands® Pumpkin Pie Spice
  • 2 eggs
  • 0.5 cup Karo® Lite Syrup
  • 1 (15 ounce) can pumpkin
  • 1 (12 fluid ounce) can evaporated milk
  • 18 baking cups, size 2 1/2
  • 18 vanilla wafers
Instructions:
  • Combine sugar, salt, and spice in a bowl. Gently beat in the eggs, then stir in the corn syrup, pumpkin, and evaporated milk until well blended.
  • Line muffin pans with baking cups, add one vanilla wafer to each cup, then fill them two-thirds full with the delicious pumpkin mixture.
  • Bake at 300°F for 25 minutes, or until a knife inserted in the center comes out clean. Let it cool in the pans for 5 minutes before removing.
  • Chill for at least 1 hour before serving. Add garnishes to suit your taste.
