Ingredients:
1 large red onion
800 g higher-welfare minced chuck steak
olive oil
1splash of white wine vinegar
2 large gherkins
4sesame-topped brioche burger buns
4-8rashers of higher-welfare smoked streaky bacon
4teaspoons American mustard
Tabasco Chipotle sauce
4thin slices of Red Leicester cheese
4teaspoons tomato ketchup
¼ of an iceberg lettuce
2heaped tablespoonsfree-range mayo
1heaped tablespoontomato ketchup
1teaspoonTabasco Chipotle sauce
1teaspoonbrandy or bourbon (optional)
Instructions:
Visit your butcher and request 800g of chuck steak to be minced. Divide the meat into 4 portions, shape each into a flat patty, and chill. Slice the red onion and marinate with vinegar and salt. Prepare gherkins, buns, and lettuce. Cook 2 patties at a time in a non-stick pan, seasoning with mustard and Tabasco while flipping. Top with bacon and cheese, melt, and set aside. Toast buns in bacon fat. Assemble burgers with sauce, patty, onions, gherkins, and ketchup. Serve immediately or wrap in paper for a messy treat.
