Whip up a quick and easy Instant Pot® Mexican lentil and rice side dish. Transform leftovers into a delicious bean dip.
Ingredients:
  • 3 cups chicken broth
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 0.75 cup brown lentils
  • 0.75 cup brown rice
  • 1 small onion, chopped
  • 2 jalapeno peppers, seeded and chopped
  • 2 cloves garlic, minced
  • 1 tablespoon taco seasoning
  • 1 teaspoon dried Mexican oregano
  • 1 teaspoon ground cumin
  • 2 cups shredded Mexican cheese blend
  • 1 tablespoon chopped fresh cilantro, or to taste
Instructions:
  • In a multi-functional pressure cooker, mix chicken broth, tomatoes, lentils, rice, onion, jalapeno peppers, garlic, taco seasoning, oregano, and cumin. Close and lock the lid, then select high pressure and set the timer for 8 minutes following the manufacturer's instructions. Let the pressure build for 10 to 15 minutes.
  • Allow the pressure to naturally release for about 10 minutes following the manufacturer's guidelines.
  • Uncover and mix in half of the Mexican cheese blend. Sprinkle the rest of the cheese on top, cover, and allow to sit for 4 minutes. Finish with a sprinkle of fresh cilantro for a burst of flavor.
