Instant Pot® vegan cauliflower soup with luxurious olive oil drizzle for extra richness and flavor.
Ingredients:
  • 4 cups vegetable stock
  • 1 head cauliflower, roughly chopped
  • 2 medium Yukon gold potatoes, peeled and chopped
  • 2 carrots, roughly chopped
  • 0.5 red onion, roughly chopped
  • 0.25 cup extra virgin olive oil
Instructions:
  • In a multi-functional pressure cooker (such as Instant Pot®), add vegetable stock, cauliflower, potatoes, carrots, onion, salt, and pepper. Close the lid, lock it, and select the Soup/Broth setting following the manufacturer's instructions. Set the timer for 10 minutes and patiently wait for the pressure to build for 10 to 15 minutes.
  • Carefully release pressure using the quick-release method following the manufacturer's instructions, wait for about 5 minutes. Remove the lid. Use an immersion blender to smoothly puree the soup. Drizzle in olive oil while blending until well incorporated.
  • Adjust seasoning to your preference by adding more salt and pepper to enhance the flavors of the soup.
