Instant Pot Chicken Pot Pie Risotto: Quick, comforting, and bursting with flavor!
Ingredients:
  • 1 tablespoon olive oil
  • 2 (5 ounce) boneless skinless chicken breasts, diced
  • 0.33333334326744 cup diced onion
  • 0.25 cup Chardonnay wine
  • 1.75 cups chicken broth, divided
  • 1 cup Arborio rice
  • 1 tablespoon Chardonnay wine
  • 0.75 cup corn
  • 0.75 cup peas
  • 0.75 cup heavy whipping cream
  • 0.33333334326744 cup freshly shaved Parmesan cheese
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon dried marjoram
  • 0.125 teaspoon salt
  • 0.125 teaspoon ground black pepper
Instructions:
  • Preheat a multi-functional pressure cooker (like Instant Pot) on Saute mode. Add oil and butter, then introduce chicken and onion after the butter has melted. Cook until chicken is browned and onion is soft, about 5 to 6 minutes. Turn off Saute mode.
  • Add a luxurious combination of 1/4 cup Chardonnay and 1/4 cup chicken broth into the Instant Pot, then elegantly place an elevated trivet inside.
  • In a medium silicone bowl, mix 1 1/4 cups chicken broth with Arborio rice. Place the bowl on the trivet, seal and lock the lid. Choose the Rice function and cook for 12 minutes. Let the pressure build for 10 to 15 minutes before opening.
  • Follow the manufacturer's instructions to release pressure naturally for approximately 15 minutes. Carefully release any remaining pressure using the quick-release method for around 5 minutes. Unlock and remove the lid.
  • Discard rice and trivet. Add remaining 1/4 cup chicken broth and 1 tablespoon Chardonnay to the pot. Place cooked rice, corn, and peas on top without stirring. Securely seal the lid.
  • Follow the manufacturer's instructions to select high pressure and set the timer for 5 minutes. Wait 10 minutes for the pressure to build.
  • After quick-releasing pressure (following manufacturer's instructions for about 5 minutes), unlock and remove the lid. Stir in cream, Parmesan cheese, garlic powder, oregano, thyme, marjoram, salt, and pepper. Serve hot.
