Instant Pot Chicken Tinga Tostadas: Quick and easy weeknight dinner.
Ingredients:
  • 1 tablespoon butter
  • 1 onion, halved and sliced
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (6.5 ounce) can tomato sauce
  • 1 (7 ounce) can chipotle peppers in adobo sauce
  • 2 pounds boneless, skinless chicken breasts, cubed
  • 1 tablespoon chili powder
  • 0.5 teaspoon ground cumin
  • 1 pinch salt
  • 1 (12 ounce) package tostada shells
Instructions:
  • Preheat the Instant Pot using the Saute function. Melt butter, cook onions until soft, then add garlic and cook for 30 seconds. Add tomatoes, tomato sauce, and chipotle peppers. Mix in the chicken and stir well. Seal the lid securely.
  • Follow manufacturer's instructions to set instant pot to high pressure; set timer for 12 minutes. Allow pressure to build for 10 to 15 minutes.
  • After safely releasing pressure as directed by the manufacturer, carefully open the lid. Season your dish with chili powder, cumin, and salt. Serve on tostadas with your favorite toppings.
