Classic Irish shepherd's pie with seasoned lamb and vegetables topped with creamy Irish Cheddar mashed potatoes.
Ingredients:
  • 1 tablespoon butter
  • 2 pounds lean ground lamb
  • 0.33333334326744 cup all-purpose flour
  • 1 tablespoon ketchup
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon paprika
  • 0.125 teaspoon ground cinnamon
  • 2.5 cups water, or as needed
  • 1 (12 ounce) package frozen peas and carrots, thawed
  • 2.5 pounds Yukon Gold potatoes, peeled and halved
  • 0.25 pound Irish cheese (such as Dubliner®), shredded
  • 0.25 cup cream cheese
  • 1 pinch ground cayenne pepper
  • 1 large egg yolk
  • 2 tablespoons milk
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly cooked dish.
  • Heat olive oil and butter in a Dutch oven over medium heat. Add ground lamb and onion, cook and stir until the meat is brown and crumbly, approximately 10 minutes.
  • Incorporate flour into the mixture, then add garlic, ketchup, rosemary, paprika, cinnamon, salt, and pepper. Cook and stir until garlic is fragrant, about 2 to 3 minutes.
  • Deglaze the Dutch oven by stirring in water to loosen any brown bits. Lower the heat to medium-low and simmer the mixture until thickened, about 5 to 6 minutes.
  • Take the lamb mixture off the heat and gently fold in the peas and carrots until well mixed.
  • Spread the flavorful lamb mixture evenly in a 9x13-inch baking dish and keep it to the side for now.
  • In a large pot, generously season water with salt and add potatoes. Bring to a boil, then simmer on medium heat until potatoes are tender, approximately 15 minutes. Drain and return potatoes to the pot.
  • Blend creamy Irish cheese, rich cream cheese, butter, and a touch of spicy cayenne pepper into fluffy potatoes until velvety. Season generously with salt and freshly ground black pepper for a flavorful finish.
  • In a small bowl, combine egg yolk and milk, then mix into mashed potatoes.
  • Evenly spread the mashed potatoes over the lamb mixture in the baking dish to cover.
  • Bake until the top is golden brown, the sauce is bubbling around the edges, for 25-30 minutes in the preheated oven.
