Moist carrot cake with a citrus twist: Mandarin oranges hidden inside!
Ingredients:
  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 2.5 teaspoons baking soda
  • 2.5 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 0.25 teaspoon ground nutmeg
  • 2 cups shredded carrots
  • 1 (11 ounce) can mandarin oranges, drained
  • 1.25 cups vegetable oil
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon grated orange zest
Instructions:
  • Heat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x13x2-inch baking dish.
  • Combine flour, sugar, baking soda, ground cinnamon, salt, and nutmeg in a bowl. Use an electric mixer to blend in carrots, mandarin oranges, oil, eggs, vanilla extract, and orange zest until smooth, for about 2 minutes. Pour the batter into the baking dish.
  • Bake in the oven until a toothpick inserted in the cake's center comes out clean, for 40-50 minutes.
