Delicious Turkish Iskender Kebab made with juicy chicken slices and flavorful tomato sauce on crispy pita bread.
Ingredients:
  • 4 pita bread rounds
  • 1 tablespoon olive oil
  • 4 skinless, boneless chicken breast halves - chopped
  • 2 medium onion, chopped
  • 1 clove garlic, minced
  • 1 (10.75 ounce) can tomato puree
  • ground cumin to taste
  • salt to taste
  • ground black pepper to taste
  • 0.5 cup butter, melted
  • 1 cup Greek yogurt
  • 0.25 cup chopped fresh parsley
Instructions:
  • Preheat your oven to 350°F (175°C), then place the pita bread on a baking sheet.
  • Toast the pitas in the preheated oven until lightly crispy; cut them into bite-sized pieces and keep them warm.
  • In a skillet over medium heat, warm the oil until shimmering. Add the chicken, onion, and garlic, and sauté until chicken is fully cooked and no longer pink, approximately 10 minutes. Stir in tomato purée and season with cumin, salt, and pepper. Cook and stir for a few more minutes before serving.
  • Place the toasted pita pieces in a serving dish. Drizzle them with melted butter and add the chicken mixture on top. Finish by garnishing with yogurt and parsley before serving.
