Italian Beef and Green Pepper Sandwiches

Italian-style slow-cooked beef and pepper sandwiches - a flavorful twist on a classic dish.
Ingredients:
  • 2-pound fresh beef brisket
  • 1 tablespoon vegetable oil
  • 1 can (10 1/2 ounces) condensed beef broth
  • 2 cloves garlic, finely chopped
  • 1 teaspoon dried oregano leaves
  • 1 teaspoon dried basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crushed red pepper
  • 2 medium green bell peppers, cut into 1/4-inch strips
  • 12 slices crusty Italian or French bread, each about 1 inch thick
Instructions:
  • Trim excess fat from the beef, then sear it in a hot skillet with oil for about 10 minutes, flipping occasionally, until both sides are nicely browned.
  • Add the beef to a large slow cooker. Combine all ingredients except bell peppers and bread, then pour the mixture over the beef.
  • Cook the beef on low heat for 8 to 10 hours until it is perfectly tender.
  • Transfer the succulent beef to a cutting board and elegantly slice it into thin, delectable pieces.
  • If desired, remove any excess fat from the beef juices in the cooker. Add bell peppers to the juices, cover, and cook on high heat for 15 minutes. Place the beef slices back into the cooker.
  • On each plate, lay down 2 slices of bread and generously top them with the flavorful beef mixture.
