Crustless cheesecake for a lighter indulgence!
Ingredients:
  • 1.5 pounds ricotta cheese
  • 0.5 teaspoon almond extract
  • 0.5 teaspoon rum flavored extract
  • 1 tablespoon grated lemon zest
  • 0.25 cup fresh lemon juice
  • 1 tablespoon grated orange zest
Instructions:
  • Preheat your oven to a toasty 400 degrees F (205 degrees C) and generously grease and flour a 9-inch round springform or regular pan.
  • Mix together the ricotta, confectioners' sugar, and eggs until well blended. Add vanilla, almond extract, rum extract, lemon juice, lemon zest, and orange zest. Beat by hand until smooth and creamy. Pour the batter into the prepared pan.
  • Bake at 400 degrees F (205 degrees C) for 40 minutes until beautifully golden. Let cool on a wire rack.
