0.5 poundsquid - tentacles and tubes, cleaned and cut into rings
salt to taste
groundblack pepper
1lemon, cut into wedges
1tablespoongratedManchego cheese
1tablespoonjuliennedfresh basil leaves
Instructions:
Fill a large pot with salted water and bring it to a rolling boil. Add linguine and cook uncovered, stirring occasionally, until al dente, about 11 minutes. Drain in a colander.
Begin by heating a large skillet with 1/4-inch of olive oil over low heat. Add garlic, 1 teaspoon Italian seasoning, and anchovies; cook and stir until the anchovies melt into the oil, for 7 to 10 minutes. Stir in the crushed tomatoes and bring to a simmer over medium heat. Add the clams, then arrange the shrimp in a single layer. Allow the shrimp to simmer until they turn pink on one side, approximately 2 minutes. Next, add the scallops and squid. Cook until the shrimp are bright pink on the outside and no longer transparent in the center, about 2 more minutes. Finally, season with salt, pepper, and the remaining 1 teaspoon Italian seasoning.
Combine the cooked pasta with the sauce, then sprinkle with a lemon wedge, Manchego cheese, and basil right before enjoying.
