Korean jab chae: Sweet potato noodles, beef, and veggies stir-fried to perfection.
Ingredients:
  • 3 cups water
  • 0.5 pound sweet potato vermicelli noodles
  • 1 tablespoon vegetable oil, divided, or as needed
  • 3.5 ounces beef tenderloin, cut into strips
  • 1 clove garlic, crushed
  • salt and ground black pepper to taste
  • 1 onion, thinly sliced
  • 1 carrot, cut into matchstick-size pieces
  • 2 spring onions, cut into 2-inch pieces
  • 2 tablespoons soy sauce
  • 2 teaspoons white sugar
  • 0.5 teaspoon sesame seeds
  • 0.5 teaspoon sesame oil
Instructions:
  • 1. Bring a pot of water to a vigorous boil and add vermicelli noodles. Cook the noodles until they turn clear and soft, which should take about 10 to 12 minutes. 2. Drain the noodles in a colander and allow them to sit for 10 minutes before rinsing them thoroughly with cold water. 3. Cut the noodles into smaller pieces by slicing them 2 to 3 times.
  • In a skillet over medium-high heat, saute beef, garlic, salt, and pepper in 1 teaspoon of oil until beef is cooked through, about 3 to 4 minutes. Transfer mixture to a large bowl.
  • In the same skillet, saute the onion with salt and pepper in 1 teaspoon of oil until slightly tender, 2 to 3 minutes. Transfer the onion to the beef. Repeat the process with the carrot and spring onions separately using the remaining oil, then add them to the beef mixture.
  • Combine the noodles with the flavorful beef mixture.
  • Combine soy sauce, sugar, sesame seeds, and sesame oil, whisking until well blended; then, pour over noodle mixture and mix thoroughly.
