Jab Chae (Korean Noodles)

Korean jab chae: Sweet potato noodles, beef, and veggies stir-fried to perfection.
Ingredients:
3cups water
0.5 poundsweet potato vermicelli noodles
1tablespoonvegetable oil, divided, or as needed
3.5 ounces beef tenderloin, cut into strips
1clovegarlic, crushed
salt and ground black pepper to taste
1onion, thinly sliced
1carrot, cut into matchstick-size pieces
2spring onions, cut into 2-inch pieces
2tablespoons soy sauce
2teaspoons white sugar
0.5 teaspoonsesame seeds
0.5 teaspoonsesame oil
Instructions:
1. Bring a pot of water to a vigorous boil and add vermicelli noodles. Cook the noodles until they turn clear and soft, which should take about 10 to 12 minutes.
2. Drain the noodles in a colander and allow them to sit for 10 minutes before rinsing them thoroughly with cold water.
3. Cut the noodles into smaller pieces by slicing them 2 to 3 times.
In a skillet over medium-high heat, saute beef, garlic, salt, and pepper in 1 teaspoon of oil until beef is cooked through, about 3 to 4 minutes. Transfer mixture to a large bowl.
In the same skillet, saute the onion with salt and pepper in 1 teaspoon of oil until slightly tender, 2 to 3 minutes. Transfer the onion to the beef. Repeat the process with the carrot and spring onions separately using the remaining oil, then add them to the beef mixture.
Combine the noodles with the flavorful beef mixture.
Combine soy sauce, sugar, sesame seeds, and sesame oil, whisking until well blended; then, pour over noodle mixture and mix thoroughly.
