Jac's Ground Chicken Lasagna

Indulge in this flavorful ground chicken lasagna paired with a Caesar salad and crusty bread for a satisfying meal.
Ingredients:
  • 1 pound ground chicken
  • 2 cloves garlic, minced, or to taste
  • 1 (24 ounce) jar marinara sauce
  • 0.5 cup dry red wine
  • 0.5 cup water
  • 1 (15 ounce) container ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1.5 cups grated Parmesan cheese, divided
  • 2 eggs, beaten
  • 2 teaspoons dried basil, or to taste
  • 2 teaspoons dried parsley, or to taste
  • 9 no-boil lasagna noodles
  • aluminum foil
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Preheat a nonstick skillet over medium-high heat. Sauté ground chicken until browned and crumbly, about 5-7 minutes. Add garlic, sauté briefly. Stir in marinara sauce, red wine, and water. Simmer until heated through, approximately 5 minutes.
  • Combine ricotta cheese, mozzarella cheese, half of the Parmesan cheese, eggs, basil, and parsley in a bowl.
  • Layer 1/4 of the meat sauce on the bottom of a 9x13-inch baking dish, add 3 noodles and spread 1/3 of the cheese mixture. Repeat twice, then finish with the remaining meat sauce. Cover the dish tightly with aluminum foil.
  • After baking for 1 hour, take off the foil and sprinkle the remaining Parmesan on top. Continue baking without the foil until the cheese is melted and bubbling, around 5 more minutes.
