Spicy green beans with optional shrimp or chicken for a flavorful main dish twist. Heat seekers will love this fiery dish!
Ingredients:
  • 2 cloves garlic, minced
  • 1 bird's eye chile, seeded and minced
  • 1 tablespoon minced lemon grass
  • 1 tablespoon fish sauce
  • 0.5 cup coconut milk
  • 1 tablespoon peanut oil
  • 1 bunch green onions, chopped
  • 1.5 cups fresh green beans, trimmed and halved
Instructions:
  • Blend the garlic, bird's eye chile, lemon grass, fish sauce, and coconut milk in a blender until creamy; then, set the mixture aside. Boil salted water in a saucepan over high heat. Cook the green beans for 2 minutes; then, drain.
  • Start by heating the aromatic and flavorful peanut oil in a skillet over medium-high heat. Add the green onions and sauté them for 1 to 2 minutes until they soften and develop a slight caramelized color. Mix in the luscious pureed sauce and bring it to a gentle simmer. After cooking for 2 to 3 minutes, introduce the green beans to the mix. Lower the heat to medium-low and let the green beans simmer until they are perfectly tender, which should take around 5 minutes.
