Jack-o’-Lantern Cupcakes

Create adorable Jack o' Lantern cupcakes with canned pumpkin, Betty Crocker™ cake mix, and creamy cream cheese frosting for a simple and festive Halloween treat.
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Butter Pecan Cake Mix
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1/2 cup water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 2 tubs (12 oz) Betty Crocker™ Whipped Cream Cheese Frosting
  • 1 teaspoon orange paste food color
  • 2 tubes (0.68 oz each) Betty Crocker™ black decorating gel
  • 12 green gumdrops
  • 24 candied pecan halves
Instructions:
  • Preheat the oven to 350°F and line 24 regular-size muffin cups with paper baking cups.
  • In a large bowl, mix cake mix, pumpkin, water, oil, and eggs with an electric mixer on low speed until combined. Increase speed to medium and beat for 2 minutes. Portion batter evenly into muffin cups.
  • Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Let it cool for 10 minutes, then remove from the pans onto cooling racks until completely cooled.
  • Blend the frosting and food color in a medium bowl until smooth. Frost the cupcakes and use black decorating gel to create a jack-o'-lantern face.
  • Flatten gumdrops on a work surface using a rolling pin, then cut out leaf shapes with a sharp knife. Place the leaf cutouts and a pecan half on cupcakes near the stems.
