Impress loved ones with festive pumpkin spice cookies for Halloween!
Ingredients:
  • 2 1/2 cups packed brown sugar
  • 1 cup butter or margarine, softened
  • 1/2 cup shortening
  • 2 eggs
  • 4 cups Gold Medal™ all-purpose flour
  • 4 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • Assorted candies, nuts and miniature semisweet chocolate chips, if desired
  • 6 cups powdered sugar
  • 2/3 cup butter or margarine, softened
  • 1/3 cup frozen (thawed) orange juice concentrate
  • Green, yellow and red food colors
Instructions:
  • Preheat oven to 375°F. Combine brown sugar, 1 cup butter, shortening, and eggs in a large bowl until thoroughly mixed. Add flour, pumpkin pie spice, baking powder, and salt, and stir to combine.
  • Roll 1/4 of the dough at a time on a lightly floured surface to 1/4-inch thickness, using a 3-inch pumpkin-shaped or round cookie cutter to create the shapes. Place the cutouts on ungreased cookie sheets and refrigerate the remaining dough until ready to use.
  • Bake for 8 to 10 minutes, or until golden brown. Transfer the cookies from the sheets to cooling racks and let them cool completely for about 30 minutes.
  • In a large bowl, cream together powdered sugar and 2/3 cup of butter until smooth. Mix in the juice concentrate. Transfer 1/3 cup of the frosting to a small bowl and add green food coloring until you achieve the desired stem color. To the rest of the frosting, add 2 drops of yellow food coloring for every 1 drop of red food coloring to create the perfect shade of orange. Use the orange frosting to generously frost the cookies and the green frosting for the stems. Decorate with candies to create jack-o'-lantern faces.
