Spooky jack-o'-lantern stuffed peppers with meat, cheese, and rice filling - a deliciously festive meal.
Ingredients:
  • 1 teaspoon olive oil
  • 4 large orange bell peppers
  • 1 pound ground beef
  • 2 teaspoons kosher salt
  • 0.5 teaspoon ground black pepper
  • 3 pinches cayenne pepper, or to taste
  • 1 teaspoon Worcestershire Sauce
  • 0.333 cup thinly sliced green onions
  • 2 tablespoons salted butter, melted
  • 2 tablespoons ketchup
  • 1 cup grated sharp Cheddar cheese
  • 1 cup cooked rice
  • 2 cups seasoned tomato sauce, warmed
Instructions:
  • Prepare all your ingredients. Preheat the oven to 400 degrees F (200 degrees C) and coat a baking dish with olive oil.
  • Carve eyes, nose, and mouth into the flattest side of each pepper to create a jack-o'-lantern appearance. Remove the tops by cutting around the seed pods and discard seeds from under the stems. Trim the white membrane and shake out any remaining seeds from inside the peppers. Transfer the prepared peppers to the baking dish.
  • Combine ground beef, salt, pepper, cayenne, Worcestershire sauce, garlic, green onions, melted butter, ketchup, Cheddar cheese, and rice in a bowl, mixing thoroughly.
  • Evenly fill peppers with the stuffing mixture and place the pepper tops back on.
  • Cover the baking dish with foil, place on a sheet pan, and bake in the upper center of the preheated oven for 1 hour.
  • Uncover the dish and bake for an additional 10 to 15 minutes, or until the peppers are tender and the ground beef is fully cooked.
  • Place the stuffed peppers on a generous bed of warm tomato sauce and serve immediately with extra sauce on the side.
