Indulge in a rustic raspberry crisp with a sweet crumbly topping, evoking memories of classic apple pie.
Ingredients:
  • 4 cups fresh raspberries, divided
  • 0.25 cup water, or as needed
  • 0.75 cup white sugar
  • 2 tablespoons cornstarch
  • 1.75 cups quick-cooking oats
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 0.5 teaspoon baking soda
  • 0.5 cup butter, softened
Instructions:
  • Preheat your oven to 350°F (175°C), then generously grease a 9-inch baking dish.
  • Mash 1 cup of fresh raspberries with a fork. Transfer the crushed berries to a liquid measuring cup and top up with water to reach 1 cup.
  • In a saucepan, mix sugar and cornstarch. Add raspberry-water mixture and bring to a boil. Cook until thickened, about 2 minutes, stirring occasionally. Reduce heat to simmer, add the remaining 3 cups raspberries, then remove from heat and let it cool.
  • Combine oats, flour, brown sugar, and baking soda in a bowl. Use 2 knives or a pastry blender to cut in the butter until the mixture forms coarse crumbs.
  • Press half of the crumb mixture evenly into the bottom of the baking dish. Spread raspberry mixture over the crumb layer, then sprinkle the rest of the crumb mixture on top.
  • Bake until the top turns a beautiful golden brown, about 25 to 30 minutes in the preheated oven.
