Classic Portuguese jambalaya: rice, beans, peppers, onions, and linguica in a flavorful medley.
Ingredients:
0.5 cupbutter
1poundlinguica sausage, cut into cubes
1 large onion, chopped
1green bell pepper, chopped
1red bell pepper, chopped
1teaspoongroundblack pepper
1teaspoondried basil
0.5 teaspoondried oregano
1 (15.5 ounce) canprepared shelled beans
2.5 cups water
2cups uncookedwhite rice
Instructions:
In a large, heavy pot over medium-high heat, melt butter, then sauté linguica, onion, bell peppers, black pepper, basil, and oregano until vegetables are very tender (10 to 15 minutes).
Combine the beans into the flavorful linguica-vegetable mixture and sauté until the beans are tender, approximately 5 minutes.
Pour water into the pot and gently stir in the rice. Cover and simmer over low heat until the rice is tender and all the liquid is absorbed, about 20 to 25 minutes.
