Classic Portuguese jambalaya: rice, beans, peppers, onions, and linguica in a flavorful medley.
Ingredients:
  • 0.5 cup butter
  • 1 pound linguica sausage, cut into cubes
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried oregano
  • 1 (15.5 ounce) can prepared shelled beans
  • 2.5 cups water
  • 2 cups uncooked white rice
Instructions:
  • In a large, heavy pot over medium-high heat, melt butter, then sauté linguica, onion, bell peppers, black pepper, basil, and oregano until vegetables are very tender (10 to 15 minutes).
  • Combine the beans into the flavorful linguica-vegetable mixture and sauté until the beans are tender, approximately 5 minutes.
  • Pour water into the pot and gently stir in the rice. Cover and simmer over low heat until the rice is tender and all the liquid is absorbed, about 20 to 25 minutes.
