Explore the umami-rich world of Korean cuisine with black bean noodles, a staple ingredient in the classic dish jajangmyeon.
Ingredients:
  • 0.5 tablespoon canola oil
  • 1 clove garlic, minced, or more to taste
  • 0.5 cup cubed carrots
  • 0.5 cup peeled and cubed potatoes
  • salt and ground black pepper to taste
  • 0.5 cup peeled and cubed zucchini
  • 0.5 cup chopped onion
  • 1 tablespoon water
  • 1 cup water
  • 4 tablespoons black bean paste (chunjang)
  • 1 tablespoon white sugar, or to taste
  • 0.5 (7 ounce) package jaa jang myun noodles
Instructions:
  • In a wok over medium heat, sizzle oil. Toss in garlic, carrot, and potato. Season with salt and pepper and sauté until tender, about 5-7 minutes. Introduce zucchini and onion, then stir well.
  • Mix cornstarch and water in a bowl until well combined.
  • Combine water, black bean paste, and sugar in the wok and stir. Gradually pour the starch mixture into the wok while stirring continuously. Cook until the sauce thickens, about 3 to 5 minutes.
  • 1. Boil a large pot of lightly salted water. Add noodles and cook until al dente, about 3 minutes. Stir occasionally. Drain noodles.
  • Plate the noodles generously in a large pasta bowl, then spoon the flavorful black bean mixture over the top. Gently toss everything together for a delicious blend of flavors.
