Spicy Mexican cornbread with jalapeños for a zesty twist on a classic quick bread.
Ingredients:
  • 1 (8.25 ounce) can cream-style corn
  • 1 cup yellow cornmeal
  • 0.75 cup buttermilk
  • 3 large eggs
  • 0.5 cup corn oil
  • 3 ounces shredded Cheddar cheese
  • 2 jalapeno peppers, minced
  • 1 teaspoon salt
  • 0.5 teaspoon baking soda
  • 2 tablespoons butter
Instructions:
  • Preheat the oven to 400°F (200°C) and position a rack in the center.
  • In a large bowl, combine cream-style corn, cornmeal, buttermilk, eggs, corn oil, Cheddar cheese, jalapeño peppers, salt, and baking soda until a well-combined batter forms.
  • Place butter in a 9-inch square baking dish and let it melt in the preheated oven for 2 to 3 minutes.
  • Pour the batter evenly over the melted butter in the baking dish.
  • Bake in the oven until golden brown and a toothpick comes out clean, approximately 35 minutes.
