Spicy jalapeno and zesty citrus chicken served with fragrant yellow rice.
Ingredients:
  • 0.5 cup orange juice
  • 0.25 cup lime juice
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon minced garlic
  • 2 jalapeno peppers, seeded and minced
  • 4 skinless, boneless chicken breast halves
Instructions:
  • Combine the zesty orange juice, tangy lime juice, aromatic cumin, flavorful garlic, and spicy jalapeno in a bowl, then transfer to a resealable plastic bag. Add the chicken breasts, ensuring they are fully coated with the marinade. Remove any excess air from the bag and seal it tightly. Allow the chicken to marinate in the refrigerator for 2 to 4 hours.
  • Preheat the broiler and adjust the oven rack 6 inches from the heat source. Remove chicken from marinade, allow excess to drip off, and discard any leftover marinade. Transfer chicken to a broiling pan.
  • Cook the chicken breasts under the broiler until cooked through and the juices run clear, about 15 minutes. Use an instant-read thermometer in the center to ensure it reaches at least 165 degrees F (74 degrees C).
