Get the kids involved in making a fluffy sponge cake with delicious jam and cream filling.
Ingredients:
  • 6 eggs
  • 161.25 gm caster sugar
  • 99.00 gm self-raising flour, sifted plus extra to dust
  • 82.50 ml plain flour, sifted
  • Whipped cream, to serve
  • Jam, to serve
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180°C. Prepare two 20cm sponge pans by greasing, lining, and dusting with flour.
  • In the bowl of an electric mixer (or using an electric hand beater), beat the eggs for 2 minutes. Gradually add the sugar and beat for 5 more minutes until pale. Gently fold in the sifted flours and 2 tablespoons of hot water using a metal spoon.
  • Pour the mixture evenly into the 2 pans and bake in the middle of the oven for 20-25 minutes until golden and fully cooked. Allow it to rest for 5 minutes, then transfer to a wire rack to cool completely.
  • Spread one sponge generously with sweet and tangy jam, then lavish it with fluffy cream. Gently place the second sponge on top and give it a delicate dusting of powdered sugar.
