Indulge in a nostalgic British favorite, jam roly-poly, with a twist of fresh raspberries. This baked dessert boasts a crunchy sugar glaze and is a fun activity for kids to join in. Choose your favorite soft fruit and jam for a personalized touch.
Ingredients:
  • 1 small knob of unsalted butter for greasing
  • 250 g self-raising flour
  • 125 g shredded suet
  • 25 g caster sugar plus extra for sprinkling
  • 20 ml milk plus extra for brushing
  • 5 tablespoons quality raspberry jam
  • 1 handful of raspberries plus extra to serve
  • 1 large free-range egg
  • fresh vanilla custard
Instructions:
  • 1. Preheat the oven to 200ºC/400ºF/gas 6. Grease a baking tray with butter. 2. Combine flour, suet, sugar, and a pinch of sea salt in a bowl. Have a child stir while gradually adding milk until a soft, non-sticky dough forms. 3. On a floured surface, roll the dough out to a 20cm x 30cm rectangle, 1cm thick. Trim if needed. 4. Spread jam over the dough leaving a 1cm border, then add raspberries. 5. Roll the dough from the short side into a log with the help of kids. Place on the baking tray with the sealed edge down. 6. Beat an egg in a bowl and brush it over the log, sprinkle with sugar. 7. Bake for 30-40 minutes until golden and cooked. 8. Slice and serve with custard and extra raspberries if desired.
