Jamoncillo de Leche (Mexican Fudge)

Traditional Mexican pecan fudge candy with a hint of cinnamon, known as jamoncillo de leche.
Ingredients:
  • 1 quart whole milk
  • 1.75 cups white sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 cinnamon stick
  • 1 cup chopped pecans
  • 24 pecan halves for garnish
Instructions:
  • In a large heavy saucepan, mix milk, sugar, vanilla, baking soda, and cinnamon stick. Bring to a boil over medium heat, stirring constantly. After 20 minutes, discard the cinnamon stick. Insert a candy thermometer in the pan and cook until it reaches 240 degrees F (115 degrees C) or until you can see the bottom of the pan when stirring.
  • Take the candy off the heat and mix in chopped pecans. Beat with a mixer for approximately 5 minutes. Pour the mixture into a buttered 9x9-inch pan. Gently press pecan halves on top of the warm candy. Allow it to cool before cutting into pieces. Store the candy in an airtight container.
