Craft beer-infused dough with savory hints of brown sugar, garlic, and onion powder, for a delectable copycat Pizza Hut stuffed crust.
Ingredients:
  • 5 cups bread flour, divided, or as needed
  • 1 (12 fluid ounce) can or bottle warm beer
  • 0.25 cup warm water
  • 3 tablespoons shortening
  • 1 tablespoon instant yeast
  • 1 tablespoon brown sugar
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil, or to taste, divided
  • 2 tablespoons cornmeal, or as needed
  • 16 sticks string cheese
Instructions:
  • In the bowl of a stand mixer fitted with a dough hook attachment, combine 4 cups bread flour, beer, water, shortening, yeast, brown sugar, salt, garlic powder, and onion powder. Mix until well combined. Gradually add the remaining flour while the mixer is running until the dough pulls away from the sides of the bowl and forms a ball, approximately 2 minutes.
  • Grease a large bowl with a hint of fragrant olive oil. Gently place the dough into the bowl, covering it with a clean towel. Allow it to rise until doubled in size, approximately 1 hour.
  • Coat 2 pizza pans with the last 2 teaspoons of olive oil and sprinkle with cornmeal.
  • Gently deflate dough and divide into 2 equal portions. Place each on a pan, cover, and let rest for 5 minutes.
  • Gently extend each dough to 1 inch beyond the pan's edge. If the dough retracts, cover and allow to rest for an additional 5 minutes before extending again.
  • Line the edge of 1 pan with 8 cheese sticks, allowing the ends to touch. Fold the overhang over the cheese and press the dough to seal it. Repeat the same steps for the second pan.
