Jan's Cranberry Curd

Vibrant cranberry curd is a festive alternative to classic lemon curd, perfect for Thanksgiving in place of cranberry sauce.
Ingredients:
  • 2 cups fresh cranberries
  • 0.5 cup water
  • 3 egg yolks
  • 1 large egg
  • 0.75 cup white sugar
  • 0.25 cup unsalted butter, diced
Instructions:
  • In a saucepan over medium heat, let cranberries simmer with water until they burst, around 10 minutes. Gently mash cranberries with a spoon or potato masher, then remove from heat.
  • In a bowl, mix together egg yolks and egg with sugar until smooth and frothy. Slowly add 1 tablespoon of the hot cranberry mixture while whisking continuously. Gradually incorporate the remaining hot cranberry mixture, one tablespoon at a time, whisking after each addition until you've added 1/2 cup in total.
  • Pour the cranberry-egg mixture into the hot cranberry mixture and whisk together immediately. Use an immersion blender to blend the mixture until the curd is silky and smooth.
  • In a saucepan, cook curd over medium heat, whisking constantly, until it reaches a low boil and coats the back of a spoon, about 5 minutes. Remove from heat and whisk in butter until fully incorporated.
