Flavorful curry that delights all, not just vegetarians.
Ingredients:
  • 160g (2/3 cup) dried split red lentils
  • 13.80 gm vegetable oil
  • 1 brown onion, finely chopped
  • 3 tsp brown mustard seeds
  • 56.00 gm balti curry paste
  • 2 garlic cloves, finely chopped
  • 500ml (2 cups) vegetable liquid stock
  • 25 fresh curry leaves
  • Salt & ground black pepper
  • 1kg desiree, nicola or pink fir apple potatoes, peeled, cut into 4cm chunks
  • 40.00 ml chopped fresh coriander
Instructions:
  • Rinse lentils in a sieve under cold running water until water runs clear. Drain well.
  • In a large saucepan over medium-low heat, warm oil. Sauté onion for about 6 minutes until softened, then toss in mustard seeds and cook until they start popping, about 30 seconds. Add curry paste and garlic, stirring, and cook for 1 more minute.
  • Add the lentils, stock, water, curry leaves, and pepper to the pot. Turn up the heat to high and bring the mixture to a boil. Lower the heat to low and simmer partially covered, stirring occasionally, for 5 minutes.
  • Gently fold the potatoes into the flavorful curry. Simmer covered for an additional 20 minutes, stirring occasionally, until the potatoes are perfectly tender. Adjust seasoning to taste and garnish with fresh coriander before serving.
