Janelle Bloom's Chicken pesto fettuccine

Creamy microwave chicken pasta ready in under 30 minutes.
Ingredients:
  • 250g fresh fettuccine
  • 13.80 gm olive oil
  • 500g chicken breast fillets
  • 5 green shallots, chopped
  • 165mls (2/3 cup) prepared tomato pesto
  • 300mls thin cream
  • 125.00 ml black olives
  • Shaved parmesan, to serve
Instructions:
  • Transfer the pasta to a microwave-safe bowl and cover it with hot tap water. Drizzle with 1 teaspoon of olive oil.
  • Microwave uncovered on High for 4-5 minutes until "al dente." Alternatively, boil in salted water for the same time. Drain.
  • Prepare the chicken by sandwiching it between moist paper towels on a microwave-safe roasting rack. Microwave on Medium/500 watts/50% power for 7-8 minutes, or until the chicken is cooked through and tender. Let it rest for 5 minutes before serving.
  • In a 2-litre microwave-safe dish, combine green shallots and olive oil. Microwave uncovered on High/850 watts/100% for 1-2 minutes.
  • Combine the tomato pesto and cream, then simmer for 3-4 minutes on Medium/500 watts/50%.
  • Slice the chicken fillets thinly against the grain. Take the cream mixture out of the microwave, combine it with the chicken, pasta, and olives, and toss until well combined.
  • Microwave uncovered on Medium/500 watts/50% for 3-4 minutes. Serve with parmesan.
