Janey's Vegetable Noodle Soup

Cozy up with a delicious bowl of udon noodle soup packed with veggies for a satisfying weeknight dinner!
Ingredients:
  • 3 cups water
  • 2 tablespoons olive oil
  • 1 (7 ounce) package fresh udon noodles
  • 1 cup hot vegetable broth
  • 1 large carrot, peeled and diced
  • 1 large green bell pepper, diced
  • 0.5 cup chopped celery
  • 0.25 cup soy sauce
  • 0.5 cup chopped green onions
Instructions:
  • In a pot over medium-high heat, bring water and olive oil to a boil. Add noodles and cook for about 3 minutes, stirring occasionally until mostly tender. Stir in vegetable broth and carrot, cook for 1 minute. Add green bell pepper, celery, and soy sauce, bring to a boil for 1 more minute. Sprinkle green onions on top before serving.
