Indulge in this irresistible and comforting Swedish dish of creamy potatoes baked with savory anchovies and onions. Perfect for warming up on chilly nights!
Ingredients:
  • 2 large onions, cut into 1/4 inch wide strips
  • 14 fillets Swedish anchovies, or regular anchovies
  • 6 potatoes, peeled and cut into strips
  • 1.5 cups heavy cream
  • 2 tablespoons dry bread crumbs
  • 1 tablespoon melted butter
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and generously butter a 9x13 inch baking dish.
  • Evenly layer onions at the bottom of the baking dish. Arrange anchovies over the onions followed by potatoes. Pour heavy cream over the potatoes. Combine bread crumbs with melted butter and sprinkle over the potatoes.
  • Place on a baking sheet to catch any overflowing cream. Bake in a preheated oven until potatoes are soft, cream has reduced, and dish is golden brown, approximately 45 minutes.
