Traditional Swedish Christmas dish, perfect for winter feasts.
Ingredients:
  • Melted butter, to grease
  • 1.5kg potatoes, peeled
  • 18.20 gm olive oil
  • 80g butter, chopped
  • 3 brown onions, halved, thinly sliced
  • 1 x 80g btl anchovy fillets, drained, finely chopped
  • Ground white pepper
  • 250ml (1 cup) thickened cream
  • 250ml (1 cup) milk
  • 70g (1 cup) fresh breadcrumbs (made from day-old bread)
Instructions:
  • Preheat the oven to 180°C. Grease a 2L baking dish with melted butter. Slice the potatoes into matchsticks and soak in cold water to prevent browning.
  • In a medium frying pan over medium heat, heat the oil and half of the butter. Add the onion and cook for 10 minutes, stirring occasionally, until soft.
  • After draining the potato, gently pat it dry with a paper towel. Layer one-fifth of the potato on the bottom of the dish. Add a quarter of the onion and anchovy on top. Season with white pepper. Repeat layering with the rest of the ingredients, ending with the final layer of potato.
  • In a saucepan over medium heat, bring the cream and milk to a simmer. Pour this creamy mixture over the potatoes, then sprinkle with breadcrumbs and the remaining butter.
  • Cover with non-stick baking paper and foil, bake for 30 minutes. Uncover and cook for another 30 minutes until golden. Let it stand for 10 minutes before serving.
