Japanese chicken curry for two recipe

Quick and flavorful golden curry for two ready in just 17 minutes, beats delivery any day.
Ingredients:
  • 9.20 gm peanut oil
  • 325g chicken tenderloins
  • 1/2 small red onion, sliced into thin wedges
  • 1 1/2 blocks Golden Curry Sauce Mix
  • 1/2 bunch broccolini, trimmed, halved lengthways
  • 30g baby spinach
  • 125ml (1/2 cup) coconut cream
  • Lime wedges, to serve
  • Steamed rice, to serve
Instructions:
  • In a wok or frying pan, heat oil over high heat. Cook chicken for about 5 minutes, turning halfway, until almost cooked through. Transfer to a plate.
  • Add the sliced onion to the wok. Lower the heat and stir-fry until the onion is soft. Pour in 125ml (1/2 cup) of water and add the curry blocks. Stir and cook until the curry dissolves.
  • Simmer the broccolini in the pan for 2 minutes, stirring occasionally, until tender-crisp. Transfer to the plate with the chicken using a slotted spoon.
  • Pour the rich coconut cream into the wok and let it gently simmer until the luscious sauce thickens. Tear the tender chicken into bite-sized pieces with your fingers, then add it to the wok along with the broccolini and spinach, stirring for just a minute to warm everything through. Present this delightful dish with a sprinkle of the remaining onion on top.
