Elevate your sushi platter with Tamagoyaki, a delightful Japanese rolled omelet - sweet, savory, and light.
Ingredients:
  • 4 eggs
  • 0.25 cup prepared dashi stock
  • 1 tablespoon white sugar
  • 1 teaspoon mirin (Japanese sweet wine)
  • 0.5 teaspoon soy sauce
  • 0.5 teaspoon vegetable oil, or more as needed
Instructions:
  • Whisk together eggs, dashi stock, sugar, mirin, and soy sauce until sugar is fully dissolved.
  • Prepare a nonstick skillet by greasing it lightly, then heat it over medium heat.
  • Begin by gently pouring a layer of the egg mixture into the hot pan, swirling it around to ensure even coating. Cook until the bottom is firm but the top remains slightly liquid, approximately 1 minute. Use a spatula to lift one edge of the egg layer, then roll it up into a neat omelet. Push the omelet to one side of the pan. Repeat the process by adding more oil to the skillet and pouring in another thin layer of egg, allowing it to flow underneath the existing omelet. Roll up the first omelet in the new layer of egg and push it to the edge of the pan. Continue this process with the remaining egg mixture, oiling the pan as needed.
  • Transfer the rolled omelet to a serving platter and slice it into 6 equal portions before serving.
