Crowd-pleasing spicy bison and pork lasagna with spinach, cottage cheese, salsa, sweet onion, and peri-peri sauce. Easy to make and perfect for entertaining.
Ingredients:
  • 1.5 pounds ground bison
  • 0.5 pound lean ground pork
  • 1 small sweet onion, chopped
  • 1.5 teaspoons minced garlic
  • 1 (14 ounce) can no-salt-added tomato sauce (such as Hunt's®)
  • 1 (6 ounce) can no-salt-added tomato paste (such as Hunt's®)
  • 1 cup low sodium salsa
  • 1 cup water
  • 2 tablespoons peri-peri chili pepper sauce (such as Nando's®)
  • 2 teaspoons Italian seasoning
  • 1 (10 ounce) package frozen chopped spinach
  • 1 (16 ounce) package creamed cottage cheese
  • 1 (12 ounce) box oven-ready lasagna noodles (such as Italpasta®)
  • 3 cups shredded Italian cheese blend (such as Black Diamond®)
Instructions:
  • Preheat a large skillet over medium-high heat. Brown and crumble bison and pork for 5 to 7 minutes. Add onion and garlic; sauté until soft for about 3 minutes. Mix in tomato sauce, tomato paste, salsa, water, peri-peri sauce, and Italian seasoning. Simmer over low heat, stirring occasionally, until the sauce thickens and is flavorful, about 1 hour.
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • Place frozen spinach in a microwave-safe bowl and cook until steaming and all water has evaporated, for about 5 to 7 minutes. Allow it to cool slightly before folding in the cottage cheese.
  • Start by creating a flavorful base in the 9x13-inch baking pan with a thin layer of meat sauce. Layer noodles on top, followed by more meat sauce and noodles. Then, spread the entire spinach-cheese mixture over the noodles, adding another noodle layer, the rest of the meat sauce, and finish with a generous topping of shredded Italian cheese blend. Finally, cover the pan with aluminum foil before baking.
  • Place in the preheated oven for 40 minutes. Uncover and bake until the cheese is golden brown and bubbly, for approximately 15 minutes. Allow to rest for 20 minutes before slicing.
