Crunchy wonton bowls packed with jasmine rice, chicken, veggies, and rich red curry sauce for a flavorful Thai feast.
Ingredients:
  • 6 (7 inch square) wonton wrappers
  • 1 (8.8 ounce) pouch UNCLE BEN'S® Ready Rice® Jasmine
  • 1 (13.5 ounce) can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon brown sugar
  • 1 (16 ounce) package cooked chicken breast strips
  • 0.5 cup fresh green beans, cut into 1-inch lengths
  • 0.5 cup red bell pepper, cut into 1-inch pieces
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Place each wonton/egg roll wrapper in a small non-stick tortilla bowl maker and bake for 8 minutes. Let them cool, then carefully remove from the bowl maker.
  • Cook the rice following the instructions on the package.
  • In a large skillet over medium heat, gently simmer coconut milk until just bubbling. Add curry paste and brown sugar, stirring until fully combined. Bring to a gentle boil, then lower heat and simmer for 5 minutes. Mix in chicken and vegetables, cooking until chicken is heated through and vegetables are tender yet crisp, around 5 minutes.
  • Spoon jasmine rice evenly into the wonton bowls, top with red curry mixture, and enjoy!
